Ingredients
- 2 cups cauliflower, grated (about 1/2 a large head)
- 1 large egg, lightly beaten
- 1 1/2 cup mozzarella, shredded
- 2 tablespoons Parmesan cheese, grated
- 1/4 cup tomato sauce, homemade or store bought
- 1 tsp Italian seasoning
- 1 1/2 tsp of salt
- 1/4 teaspoon red pepper flakes, crushed
- Any pizza toppings you like!
Preparation
Heat oven to 400°. Line a rimmed baking sheet with oiled parchment paper.
Grate the cauliflower using a box grater or a food processor. I used my Tupperware manual food processor. Blend until you have 2 cups of cauliflower crumbles. Place in a large bowl and microwave for 7-8 minutes, or until soften. Remove and let cool. You MUST take a clean white towel or cheese cloth and squeeze all water out of the cauliflower. Do this several times. Mix in the egg, 1 cup mozzarella, Parmesan cheese, and salt and pepper and seasonings. The key is to be sure the cheese to cauliflower ratio is 1:2. Once combined, pat into a 10-inch round on the prepared pizza pan. Spray lightly with non-stick spray and bake for about 30 to 40 minutes, or until golden. If you don't use cooking spray, I brushed olive oil on top.
Top the pizza with the sauce, remaining mozzarella, and your pizza toppings. Bake in the oven until melted and bubbly, another 10 minutes.
