How to Roast a Whole Chicken in the Crockpot!!

Ingredients
  • 1 (4lb) whole chicken, insides removed and washed/patted dry
  • ½ TB of paprika
  • 2 TB all purpose seasoning ( such as Mrs. Dash or Archer Farms House Blend)
  • ½ TB garlic powder
  • 1 tsp salt
Make Chicken Salad with Avocado.

Instructions
  1. Start by mixing together paprika, all purpose seasoning, garlic powder and salt.
  2. Place 4 medium sized foil balls in bottom of crockpot. This will act as a stand to prevent the chicken from drying out.
  3. Rub seasoning over your entire chicken (including the inside of the bird). Place on top of foil balls. Cover and cook on HIGH for 4 - 4½ hours, or LOW for 6½ - 8 hours.

Savory Sweet French Toast

Ingredients

2 tablespoons unsalted butter, plus more for buttering the baking dish
12 slices very stale thick white bread (about 1/2-inch thick)
1 pound gruyere, grated
12 thin slices Black Forest ham (about 8 ounces)
10 large eggs
2 cups half-and-half
1/2 teaspoon ground cinnamon
Pinch freshly grated nutmeg
Kosher salt and freshly ground black pepper
Nonstick cooking spray
Pure maple syrup, warm, for drizzling
Directions
Adjust an oven rack to the middle position and preheat to 375 degrees F. Lightly butter a 9- by 13-inch baking dish.
Lay 6 slices of the bread in a single layer on the bottom of the baking dish (trim if needed). Sprinkle 2 heaping tablespoons of the gruyere on top of each slice. Then top each with 2 slices of the ham, folding the ham if needed to fit on top of the bread. Place the remaining 6 slices of bread on top of the of the ham to form 6 sandwiches. Sprinkle the remaining gruyere on top and on the sides of the sandwiches. Set aside.
Whisk together 4 of the eggs, the half-and-half, cinnamon, nutmeg, 1 teaspoon salt and 1/2 teaspoon pepper in a large mixing bowl. Pour on top of the sandwiches. Use your hands to lightly press the sandwiches down into the custard.
Spray a large piece of foil with nonstick spray. Place the foil, sprayed-side down, on top of the baking dish, crimping the sides of the foil around the dish. Bake for 30 minutes. Remove the foil and bake until the custard is set but still slightly jiggly, about 10 minutes. Switch the oven to broiland broil until the top is light golden brown, 3 to 5 minutes.
Allow the casserole to rest at room temperature for 20 minutes.
Meanwhile, heat the butter in a large nonstick pan over medium heat. Crack 3 eggs into the pan (it's ok if they stick together) and lightly sprinkle with salt and pepper. Cook until the whites start to set, 2 to 3 minutes, and then cover and continue cooking until the whites are set but the yolks are still runny, 1 to 2 minutes. Place each on top of a sandwich. Repeat with the remaining 3 eggs.
Use a metal spatula to remove a sandwich with egg from the casserole and place on a serving plate. Serve with warm maple syrup for drizzling.

Cauliflower Pizza Crust!!!

Ingredients

  • 2 cups cauliflower, grated (about 1/2 a large head)
  • 1 large egg, lightly beaten
  • 1 1/2 cup mozzarella, shredded 
  • 2 tablespoons Parmesan cheese, grated 
  • 1/4 cup tomato sauce, homemade or store bought 
  • 1 tsp Italian seasoning 
  • 1 1/2 tsp of salt
  • 1/4 teaspoon red pepper flakes, crushed
  • Any pizza toppings you like! 

Preparation

Heat oven to 400°. Line a rimmed baking sheet with oiled parchment paper. 

Grate the cauliflower using a box grater or a food processor. I used my Tupperware manual food processor. Blend until you have 2 cups of cauliflower crumbles. Place in a large bowl and microwave for 7-8 minutes, or until soften. Remove and let cool. You MUST take a clean white towel or cheese cloth and squeeze all water out of the cauliflower. Do this several times. Mix in the egg, 1 cup mozzarella, Parmesan cheese, and salt and pepper and seasonings.  The key is to be sure the cheese to cauliflower ratio is 1:2. Once combined, pat into a 10-inch round on the prepared pizza pan. Spray lightly with non-stick spray and bake for about 30 to 40 minutes, or until golden. If you don't use cooking spray, I brushed olive oil on top. 

Top the pizza with the sauce, remaining mozzarella, and your pizza toppings. Bake in the oven until melted and bubbly, another 10 minutes.
